Below is a small sample of our standard menu choices; all clients are provided with the full list of our extensive menu during the consultation.

We also offer low carb diets, diabetic, lactose intolerance and gluten free diets at no extra charge.

Soup Selections

  • Spanish Bean—garbanzo beans, chorizo, onion, pepper cooked in a chicken stock with herbs
  • Butternut Squash—butternut squash, apple pureed with chicken stock until thick and creamy
  • Cream of Asparagus—asparagus pureed in a rich cream sauce with onion, peppers and herbs
  • Smoked Turkey Chowder—smoked turkey in a puree of applewood smoked bacon, onions and potatoes
  • Black Bean—black beans cooked with onion, cubenelle pepper, sherry wine and chorizo

Beef Selections

  • Beef Stroganoff—Beef sautéed w/ onions mushrooms & gravy then baked w/ egg noodle
  • Stuffed Steak Rolls—skirt steak stuffed with cheeses or a mushroom stuffing or any other filling
  • Ropa Veija—flank steak shredded then cooked in a rich marinara sauce & served w/ yellow rice
  • Boliche—eye of round stuffed w/ chorizo then slow roasted in brown gravy served w/ potatoes
  • Rib Eye Steaks—marinated then grilled to your liking served w/ sautéed mushrooms
  • Cuban Breaded Steak—thin steak breaded w/ Italian bread crumbs served w/ beans & rice

Pork Selections

  • Stuffed Pork Tenderloin—stuffed w/ porcini mushrooms served w/ your choice of side dishes
  • Grilled Pork Chop in Marsala Sauce—grilled chop served with garlic mashed potatoes
  • Cuban Roast Pork—marinated in mojo served with black bean, rice and plantains
  • Pan Seared Pork Chop w/ Apple Chutney—thin chops topped w/ apple & lingonberry chutney
  • Pork Scaloppine w/ Honey Mustard—scaloppine breaded then cooked in honey mustard

Poultry Selections

  • Cornish Game Hens w/ Crab Apple Glaze—roasted game hens then glazed w/ crab apple & wine
  • Chicken in Spiced Peach Sauce—pan seared chicken then cooked in a spicy peach sauce
  • Mojo Grilled Chicken—chicken quarters marinated in mojo then grilled
  • Duck A'Lorange—roasted duck in a orange sauce served with mixed vegetables
  • Chicken w/ Prosciutto, Rosemary & Wine—pan seared chicken then slow cooked in tomato wine
  • Pecan Crusted Chicken—breast coated w/ pecans & pan seared served w/ honey mustard

Pasta Selections

  • Lobster Ravioli—hand made ravioli served in a rosa sauce
  • Lasagna—lasagna layered w/ meat sauce, mozzarella and ricotta cheese
  • Penne Neapolitan—cooked w/ green & red pepper, hot & sweet sausage & pepperoni in sauce
  • Linguini and Shrimp—shrimp cooked in a lemon butter sauce served over linguini noodles
  • Eggplant Parmesan—eggplant topped w/ sauce & cheese served with spaghetti.

Seafood Selections

  • Mahi-Mahi w/ Mango Chutney—grilled mahi topped w/ mango chutney
  • Fish Cakes—shredded fish mixed w/ shrimp & smoked salmon baked served w/ polenta & slaw
  • Seafood Paella—shrimp, scallops, tilapia, lobster, clams & mussels cooked w/ yellow rice
  • Grilled Fish in a Banana Leaf—white fish wrapped in a banana leaf then grilled
  • Tilapia in Parchment Paper—tilapia topped w/ sundried tomato, red onion and lemon wrapped.
  • Seafood Bisque Casserole—shrimp, crab, & scallops in sherry cream sauce topped w/ parmesan

Vegetarian Selections

  • Veggie Pot Pie—a blend of vegetables baked in rich vegetable stock sauce all in a crust
  • Seven Layer Tortilla Pie—flour tortillas layered w/ beans cheeses and peppers
  • Black Bean Spaghetti—angel hair pasta topped with black & kidney bean mixture w/ herbs
  • Vegetarian Cabbage Rolls—leaves stuffed w/ zucchini, onion, garlic & rice baked w/ tomato sauce
